Bell Pepper Eggs
Ingredients:
10 Eggs
1 Red Bell Pepper
2 T Cheddar Cheese
Directions:
Preheat oven to 400 degrees. Scramble eggs in a bowl. Cut up bell pepper. Add Bell Pepper and cheese to eggs and mix. Pour mixture into 10 molds in the muffin pan. (If you wanted 12 ‘egg muffins’ then use 12 eggs) Bake for about 20 mins or until done.
I put these in the refrigerator and reheat 2 at a time for 1 min in the microwave for a quick breakfast.
